Black-eyed peas are a special form of the class of beans known as Cow Peas. They are popular in American cuisine, and of course have had a pop group named after them. Asides from this of course, black-eyed peas are nutrient-rich, being high in folate (the natural form of folic acid) as well as calcium, protein (20%) and vitamin A. They are around 50% carbohydrate and 9% fibre.Black-eyed beans are relatively quick to cook, requiring little soaking, and only take around 20 minutes to boil, or around 5-10 minutes in a pressure cooker, even without soaking.
