The beans are soon excreted from their bodies in the form of fecal matters a clumped coffee beans. These clumped beans are commonly known as civet droppings. According to experts, the digestive juices and enzymes in the stomach of the civets play an important role in the fermentation process of the beans. It is said that through these digestive juices and enzymes, the bitter taste and the caffeine content of the beans are removed. This process has made Kopi Luwak less bitter and decaffeinated.
