These cabbage red is a kind of natural edible pigment extracted from purple cabbage. The pigment is a compound of several anthocyanins, flavones and tannins. It is easy soluble in water and solution of water and alcohol, but insoluble in oil and absolute alcohol. The hue and stability : The hue is influenced by PH value of solution. In acidic condition it shows stable red or purple red; in neutral condition it shows blue; in alkaline condition it shows unstable green. scope of application: liquor, carbonated drinks, fruit juice, beverages, jam and candy Storage : It should be stored in rainproof, moisture-proof, lightproof and corrosion resistant conditions ;the product can not be piled up direct on the ground, should be piled up on the tray or moisture-roof board.
