Apricots are little orange-coloured fruits with a sour flavour that are high in vitamins and minerals. Traditional dried fruits include dried apricots. The colour changes to bright orange when sulphur dioxide is added. Fruit grown without sulphur vapour treatment is deeper in colour and has a coarser texture. Dried Apricots should be consumed at least once a day to keep your body supplied with vitamins K.Before a meal, dried apricots are eaten to aid digestion. Dried Apricots have a higher potassium content than bananas. Dried apricots are high in soluble fibre and the type that dissolves into a gel-like material, making them great sources of dietary fibre. The halved and pitted fruit of the apricot tree (Prunus armeniaca) that has had the majority of the moisture removed is known as dried apricots. The dried fruit is cleaned before packing and maybe sulfured to maintain a distinctive hue.
