The guar seeds are dehusked, milled and screened to obtain the guar gum. Guar gum is extracted from the seed after a multistage industrial process. It is a white to yellowish odourless powder and has a bland taste which is available in different viscosities depending upon the requirement of the end product. It is soluble in hot and cold water but insoluble in most organic solvents. The most important property of Guar Gum is its ability to hydrate rapidly in cold water to attain uniform and very high viscosity at relatively low concentrations.
